Baechu Guk (배춧국 / Cabbage Soup)

A simple Korean cabbage soup with doenjang, garlic, soy sauce, and tuna sauce.

Ingredients

  • Cabbageas needed
  • Minced garlic0.5 tbsp
  • Water700 g
  • Korean miso / doenjang3 tbsp
  • Soy sauce1 tbsp
  • Tuna sauce1 tbsp
  • Saltto taste

Cooking Steps

    Pour water into a pot.

    Pass the Korean miso through a sieve, then stir it into the broth. You can skip the sieve if you want.

    Add everything and boil until the cabbage becomes soft.

Tips

  • Use salt at the end only after tasting because doenjang and tuna sauce are already salty.

Substitutes

Korean napa cabbage Savoy cabbage or sweetheart cabbage

Both soften well in soup and are easy to find in UK supermarkets.
